Cauliflower Soup


After you have boiled a cauliflower, it is a great extravagance to throw away the liquor; it is delicately flavored and forms the basis of a good soup. Wash well your cauliflower, taking great care to remove all grit and insects. Place it to simmer with its head downwards, in salted water; and, when it is tender, remove it. Now for the soup. Let all the outer leaves and odd bits simmer well, then pass them through a sieve.

How To Make Simple Syrup

Smoky Texas T-Bone, Marinated in Adobo Puree


Ingredients:

1 can Chipotles in Adobo sauce
2 green bell peppers, cut into 8 pieces
4 jalapenos, stems removed, cut in half
4 T-bone steaks

How To Chill Cocktail Glasses


Time Requires: Approx. 5 mins.

Directions:

Place glasses in freezer or refrigerator.
Crush only enough ice for your needs.
Take pre-chilled glass and fill with the crushed ice, or you can use ice water.
Prepare your cocktail.

Beer Barbecue Sauce


Ingredients:

1 cup Prepared barbecue sauce
1 cup Ketchup
2/3 cup Beer
1/4 cup Honey or Molasses
2 tablespoons Lemon juice
2 tablespoons Red wine vinegar
2 tablespoons Dijon mustard

Curry Garlic Dip


A mayonnaise base is seasoned with curry, garlic, and Worcestershire sauce which blend together for an unusual flavor. This dip is always a smashing success. It's also fabulous as a sauce for cold steak, pork, or lamb, and divine with cold, poached shrimp!

Anchovy Antipasto

3 anchovy fillets, finely chopped
1 can of tuna, drained and mashed

- This dip is easy to prepare ahead of time, and will keep in the refrigerator, providing nutritious snacks and appetizers, for a week (if it lasts that long). As with most bean dips/ pates, this also freezes well so I like to make large batches for use over one or more months.
